Any body, Dire, got any good ones for like a cucumber & tomato salad, corn salad or pea salad? Not looking for real spicy but kinda "creamy" and cold. I make a mean pasta salad but I don't really have any specific recipie. I use a lot of sour cream (love me some sour cream) and dilll. Don't like a lot of sweet, more "savory" type. I have discovered black beans. Absolutely love them. Love rice and now, orzo. Excuse me, a little TUI ;D ;D Love Merlot too ;D

what else goes in the dill pasta salad? there is a dill veggie dip that i buy for chips that i always thought would be good on a cold pasta salad but i wasn't sure whether to put anything else in it.
my pasta salad is made with shells and tossed in zesty italian dressing with halved grape tomatoes, diced up scallions and both mozzerella and pepperoni chunks. you can also add diced green peppers and black olive slices but my BF doesn't like them so i leave them out.

To date, I have three summer salads I really enjoy... each I have prepared at least 4 times. The thing I like most? THEY'RE EASY! 1. Summer Corn Salad[/b] Recipe Courtesy of Cathy Lowe 5 ears corn, boiled or grilled 3 table spoon olive oil 1 tomato, seeded and diced fresh cilantro, to taste 1 red onion,chopped 1 green bell bell pepper, diced pepper 1 lime,juiced salt pepper
Remove kernels with paring knife and place in large bowl. Add tomato, onion, and green pepper. Toss to combine. Add lime juice and olive oil. Snip in cilantro and season with salt and pepper. Serve.
2. The "I hate cucumbers!" Cucumber Salad (found at www.allrecipes.com * 1/2 cup red wine vinegar * 2 teaspoons white sugar * 1/2 teaspoon black pepper * 1 teaspoon dried dill weed * 1/4 cup mayonnaise * 5 cucumbers, scored and thinly sliced * 1 stalk celery, thinly sliced * 1/2 red onion, chopped * salt to taste Stir together vinegar, sugar, pepper, and dill in a large bowl until the sugar has dissolved. Stir in the mayonnaise until smooth, then add cucumbers, celery, and red onion until evenly coated with the dressing. Cover and refrigerate at least 1 hour. Season to taste with salt and stir once again before serving.
3. SICILIAN PASTA PESTO SALAD
2 lbs. ziti, penne, or other pasta, cooked
Pesto Sauce:
2 cups fresh basil leaves, chopped 1/2 cup walnut or pine nuts (optional) 4-6 large cloves garlic, minced or pressed 1 cup olive oil 1 1/4 cups grated Parmesan cheese 3-4 anchovies, blended (optional) 1/4 teaspoon crushed red pepper flakes dash of black pepper salt to taste
Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.
Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta. p.s. This says to serve hot but is just as good cold... just leave out the dead fish parts... YUCK!

Thanks!! Dire-I have seen that "I hate Cucumbers" one at Allrecipes. I love that site-I've about worn it out!!
Waltz-I put broccoli florets, cauliflower, carrot, onion, green and/or black olives (BF doesn't like black olives very much). Sometimes pepperoni. BF and I neither one care for bell peppers very much. I have used creamy Caesar dressing, Ranch, Italian...always-sour cream. Never make it the same way twice but it is always good!

Me too! One of my favorites. I'm a guy so the directions have to be pretty simple. :-) One of my early kitchen forays had a recipe that called for me to "add 2 eggs and beat it for 5 minutes"... I did... when I came back 5 minutes later, it was burnt... I didnj't understand...
