Last night I didn't feel like cooking. But there they were... all these hungry mouths gathered around chirping about how they were starving... what to do? Here's the answer...
Curry Chicken Stir Fry (A Diremaker original)
Ease of Prep:
Cook Time:
Kitchen Cleaning Afterward:
Taste:
Prep Time: 10 Minutes Cook Time: 10 minutes (if you don't rush)
3 Boneless, Skinless Chicken Breasts cut into approx 3/4 inch pieces.
2 Bags Steamfresh Long Grain rice & Mixed Vegetables
1 tbsp Curry Powder
1 tspn Garlic powder
1/2 tspn (or to taste) Fresh Black Pepper (grind it. with all these little self contained grinder bottles you don't have an excuse. The taste difference will surprise you)
1/2 Medium Yellow Onion, Chopped fine.
1 Egg
Soy Sauce
Throw the Steamfresh bags into the microwave for about 7 minutes. While it's doing it's thing grab a wok or a cast iron skillet and put it on HIGH heat till you feel the need for a fire extinguisher. Toss in the chicken, KEEP IT MOVING! The chicken should be mostly cooked in about 3 - 4 minutes, when it's almost done, about a minute to go, toss in the spices and the onion.
Hear that ding? That's the microwave. Grab the Steamfresh. Cut open the bags and throw them in on top of the chicken and combine. KEEP EVERYTHING MOVING About a minute or so should do the trick.
Now, move everything out of the center of your pan, beat the egg real quick and toss it in the middle. Incorporate it into the food well.
Add soy sauce to taste, toss in a bowl, sprinkle water onto your face to resemble sweat and then stagger out of the kitchen and announce that dinner's ready. Receive adoration and sympathy from your family and spend the rest of the night on the couch watching TV because you're "too exhausted" to move.
I swear, it took longer to post this than it did to cook it...
Enjoy!
