This happened rather oddly. It was made the same day it was seen. It's good, it's easy, and it's fast. Tuna CroquettesEase of Prep: Cook Time: Kitchen Cleaning Afterward: Taste: Recipe courtesy Alton Brown, 2008 Show: Good EatsEpisode: Tuna, Surprise! Ingredients1 (7-ounce) pouch albacore tuna, drained well and shredded by hand 2 green onions, chopped fine 2 teaspoons Dijon mustard 2 large eggs, beaten 1 teaspoon freshly squeezed lemon juice 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 3/4 cup panko bread crumbs, divided Olive oil, for sauteing DirectionsPlace the tuna, onions, mustard, eggs, lemon juice, salt, pepper and 1/4 cup of the bread crumbs into a medium mixing bowl and stir to combine. Divide the mixture into 8 rounds and set aside on a parchment lined half sheet pan. Allow to rest for 15 minutes. Place the remaining bread crumbs into a pie plate. One at a time, coat each round in the panko on all sides. Heat enough olive oil to cover the bottom of a 12-inch saute pan over medium heat until shimmering. Add the croquettes and cook 2 to 3 minutes on each side or until golden brown. Remove to a cooling rack set over a half sheet pan lined with paper towels. Allow to cool for 2 to 3 minutes before serving.

Oh man, I love Tuna Croquettes!!! Thanks for posting this Dire. Got everything but the panko bread crumbs-only regular crumbs ;D

my mom did the same thing with canned pink salmon when i was a kid. eh... it didn't occur to me not to like them... i put ketchup on them.

I could eat nothing but fish if needed to.
This sounds awesome, I love those things, but never tried to make them.
COn, I call those salmon patties and make them all the time. Variations from the above tuna recipe though. My kids love salmon patties, I am sure they would love these. Though my daughter hates seafood.

yep... that's what she called them.
later in life, rather than frying them, she pressed them into a muffin tin and baked them.

Salmon patties were a staple in my Catholic no-meat-on-Friday youth. Tuna casserole was another. Sometimes we had big old fried shrimp. I hated to cook fried oysters but Daddy loved them so we had them too. School lunch was cheese pizza or grilled cheese.
Even after Vatican II our house stayed with the old ways for a long time.

Just logged in-again-to vote. These are fantastic. Made them a couple of weeks ago and am going to make them again tonight.
Very adaptable. I don't have panko tonight so I will use regular crumbs and some Ritz crumbs for the crunch. I'll let ya know...
