4 med. tomatoes sliced 2 tablespoons chopped fresh basil or 2 tablespoons dried basil crumbled 2 tablespoons balsamic vinegar 1 tablespoon olive oil (extra virgin) .5 teaspoon sugar .5 " pepper 2 tablespoons shredded mozzarella cheese. (fat free or part-skim) 2 teaspoons shredded or grated Parmesan cheese
Arrange the Tomato slices on a large, flat plate. Sprinkle with the basil. In a small bowl, whisk togther the vinegar, oil, sugar, and pepper. Pour over the tomatoes. Sprinkle with the mozzarella and Parmesan. Cover and refrigerateuntil serving time.
Mom would fed 6 of us with this. Also I've had this cooked on a grill. It was not as good hot, but still good imo

If there were anything to be addicted to that was good for you, this would be it. We change things around sometimes such as adding thin-sliced onions and/or prosciutto. A lemon vin goes great with it as well, but the only way to truly improve this dish is to grow the tomatoes and basil yourself. Talk about "Fresh"! Mmmmm. Good stuff.

If there were anything to be addicted to that was good for you, this would be it. We change things around sometimes such as adding thin-sliced onions and/or prosciutto. A lemon vin goes great with it as well, but the only way to truly improve this dish is to grow the tomatoes and basil yourself. Talk about "Fresh"! Mmmmm. Good stuff. purple onions yes...also my Mom would add some articoke hearts
