OK, a lot of times it's easier to grab one spice bottle than it is to grab 10, so here are some spice blends I use a lot and also what I use them for.
10. Lemon Pepper. A combination of Lemon Zest and Pepper. Most commonly, I use this on green beans, but lately, I have been shown other uses for it. My Favorite? It's made locally right here in Chattanooga at Alchemy Spice Company

9. Emeril's Essence... sort of. Way back when, I bought Emeril's at the grocery store... already mixed... already 6 months old and still sitting on the shelf. One day, I was at Emeril's web site looking for a recipe and lo and behold! I found the recipe for Emeril's Essence. I then discovered that with a few "tweaks" I could make mine even better. So, here's the recipe. Make sure you have a dark, airtight container for storage.
* 2 1/2 tablespoons smoked paprika
* 2 tablespoons kosher salt
* 2 tablespoons garlic powder
* 1 tablespoon freshly ground black pepper
* 1 tablespoon onion powder
* 1 tablespoon cayenne
* 1 tablespoon dried oregano
* 1 tablespoon dried thyme
* 1 Tablespoon celery salt
8. Scenic City Sizzle.
Another blend from Alchemy Spice Company. The spices they use in their blends are an average of 6 months fresher than any store blend you buy. This particular blend has never been stored in my spice cabinet... it always stays next to the grill.
7. Big Daddy's Seasoning Mix Food network recently had a series on called The Next Food Network Star. The winner, a guy named Aaron McCargo Jr. was a guy that believed in BIG flavor. This is his spice blend. It's simple, but effective... kind of an Emeril's Essence Light.
* 1/2 cup smokey paprika
* 1/4 cup granulated onion powder
* 1/4 cup granulated garlic powder
* 3 tablespoons seasoned salt
* 1/4 cup fresh cracked pepper
* 1/2 cup kosher salt
6. Curry Powder Blend
Yep. That's right. Curry powder is a blend. And in case you didn't catch it in the spice list post before this, here's the recipe again.

2 tablespoons whole coriander seeds, toasted
1/4 cup ground turmeric
1 tablespoon dry mustard
1 teaspoon cayenne
5. Chili Powder It's a blend too. And it is UNBELIEVABLY BETTER if you take the time to make your own.

3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
2 tablespoons garlic powder
1 tablespoon dried oregano
1 teaspoon smoked paprika
4. Cavander's Greek Seasoning
I honestly think this stuff would be good on ice cream.
3. Old Bay Seafood Seasoning
Cooking Seafood? If you ain't got this, you're wrong!
2. Chive Jive Another Alchemy Spice Product. this has got to be one of the most awesome Tex-Mex spice mixes you can find. By now, you will have also noticed that Alchemy Spice lists some GREAT recipes to try their blends with. I HIGHLY recommend them... (obviously)
1. Salt, Pepper and Garlic. Kind of a let down, huh? But face it. 90% of the time, it's all you need. I mix mine at a 2:1:1/2 ration. that means 1 teaspoon salt (kosher of course), 1/2 teaspoon of FRESH GROUND black pepper and 1/4 teaspoon of garlic powder. I know I have said use fresh garlic before but in this case, the powder is fine.
Hope all of this helps everyone. If you have other blend suggestions feel free to post them. I'll try them.
