OK... in my laboratory, (the kitchen), I was bored and put this together. I hope to GOD my cardiologist doesn't read this but if there are some of you who are mushroom fans, try this and tell me what you think...
Diremaker's Buffalo Mushrooms
Ingredients
1 - 8 OZ pack mushrooms. if you're making this for more than two, you'll need to double it.
3 - TBSP Smart Balance 50 / 50 Unsalted (It's as good as butter and four times healthier)
4 - Slices of thick cut bacon, cut into 1 inch pieces.
3 - Cloves Garlic, minced fine.
1 - Medium Shallot, sliced thin.
2 or 3 - TBSP Texas Pete Hot Sauce
Instructions
1. In a cast iron skillet, (if you have one, if not a saute or fry pan), over medium heat, cook the bacon until fairly crisp.
2. Remove the bacon. Leave the drippings in the pan and reduce the heat to medium low.
3. Add the mushrooms stirring well until all of the drippings are absorbed.
4. Add the butter, shallots and garlic. Continue to cook until the shallots are translucent and the mushrooms are tender. Remove from heat.
5. Stir in the Texas Pete, coating the mushrooms evenly.
6. Serve as a side, an appetizer or over the top of a T-Bone steak.

That sounds delicious, Dire. I may try that this week when we grill steaks.
