i had to get this recipe out for my Unisys field engineer who is also a single dad and into cooking so i thought i'd share...
with the holidays coming and all... it's a little something different for those of you that make a pecan pie along with your pumpkin, just like my mom did.
German Chocolate Pecan Pie
3 Eggs, beaten
1 cup Karo Syrup, Dark (or Light, if you wish)
1 4oz package Baker's German Sweet Chocolate, melted
1/3 cup sugar
2 Tbsp butter, melted
1 tsp vanilla extract
1 cup of Angelflake coconut
1-1/2 cups of pecan halves, half of them broken into pieces
1 unbaked pie pastry shell, homemade or Pillsbury from the dairy case
1 Oven, preheated to 350 degrees
First melt the chocolate either in a double boiler or in a microwave safe bowl at 20 second increments, stirring each time to melt without scorching it. Let it cool slightly. In a large mixing bowl, beat the eggs then stir in the Karo syrup, melted chocolate, sugar, butter and vanilla. Mix until well blended. Sprinkle the coconut to separate it into the bowl, add the pecan halves and pieces and fold into the mixture. Pour into your pie pastry and bake for 50 to 60 minutes. I don't like over browned pie crust so I make a sheild for the edges by cutting a circle in a square piece of foil and laying it carefully over the top of the pie while it is baking. Everyone's oven is a bit different so the pie is finished when a knife inserted halfway between the center and the edge comes out clean.

i first discovered this pie at the Furr's Cafeteria out in west texas in the early 1980s... it was so good that i'd buy a whole one whenever i had people over for dinner and they were like $15 at the time. later, i also found the pie at the K&W Cafeteria chain when my parents relocated to southern virginia. finally, i found this recipe in a Baker's Chocolate ad in BH&G, but without coconut. this is the that recipe with the coconut added to the mix so, for those of you who don't care for coconut or have allergies, you may leave that ingredient out.
