Wilted Lettuce with Pinto Beans
Ingredients:
1 head of leaf lettuce 4 large eggs 1 lb. bacon 2 small cans mandarin oranges 1 group of scallions (5 at the least in a group) 1 large can or 1/2 pound of dried pinto beans (we used the can; drain them and then add water and salt to them in the pot) Brown sugar to taste Vinegar to taste
Directions:
Fry the bacon and take it out laying it on paper towel to rest and crisp. Turn the bacon grease to low on stove and keep warm. Cook your pinto beans in a separate pot and keep warm. Boil your eggs for 10 minutes and then do a cold wash to cool. Peel them and then dice the eggs into a tupper. Set in fridge to cool. Cut your scallions into tiny pieces into a tupper. Drain your mandarin oranges. You can cut your lettuce or tear into bite size pieces.
Your bacon dressing is the key so I don't have measurements on this. I put 3 serving spoons of brown sugar in the grease and then I pour white distilled vinegar in after to the count of three. Taste and go from there.
Layer lettuce, bacon, scallions, eggs, mandarin oranges, hot bacon grease dressing then pinto beans on top.
You can vary the recipe with other salad type veggies such as radishes, mushrooms, etc.
