I don't get the point of wrapping all that bacon around it and burning it. If he's trying to get bacon flavor into the meat why not just cut up small chunks and put it into the meat? BTW it really looks like an "explosion."

And for the record. We don't call that burned. We refer to that as "CARAMELIZED". ;D

Okay so why do they need to wrap the outside and burn the heck out of it or "carmelize" as MM puts it? Just looks like a waste of a lot of bacon to me.

All meats that are smoked for an extended period come out very dark and black looking. The tender pork shoulder sandwich that you buy at your local barbecue vendor came off the smoker burnt looking. Actually, for me, the "bark" on the outside of a smoked pork shoulder is the tastiest part. If you watch the video, you will see that the knife cuts right through the dark outside part with relative ease. It's really more of a coloration thing from the sugars in the BBQ sauce caramelizing than the meat being burnt.

Besides, we are a typical cross section of America here. 80% considered overweight / 60% considered obese. It's not a pretty picture.
