It's New Year's Eve & I'm cooking one of my fave dishes. Give it a try - bet you like it!! Penne Pasta with Italian Sausage & Veggies
1/2 lb Italian sausage cooking spray or oil 1/2 cup chopped red onion 1 garlic clove, minced 1 cup mushrooms, quartered 1 small red bell pepper, seeded, cut into 1/2" strips 1 small yellow bell pepper, seeded, cut into 1/2" strips 14.5 oz. can diced tomatoes with basil, garlic, oregano, undrained 1/4 cup sour cream 4 cups hot cooked penne pasta (1/2 lb uncooked) black pepper
Directions
Remove casings from sausage. Cook sausage in large nonstick skillet coated with cooking spray or oil over med-high heat until browned, stirring to crumble. Add onion & garlic, saute 2 min. Add mushrooms, peppers & saute 5 min. or until veggies are tender & sausage is done. Stir in tomatoes; cover & cook over med-low heat 10 min. Remove from heat; stir in sour cream. Add pasta & black pepper to taste; stir well. Cook over med-low heat 3 min. or until thoroughly heated. Yield: 4 servings (1 1/2 cup serving)
