I'm interested to have your opinions on cookware. We currently have the Emeril branded all-clad non-stick and it's great, but we are considering getting something in stainless. Sometimes you just want to get the seared scrapings in a sauce and non stick is not very conducive to this.
We're looking for something high quality. Recommendations?

I've very much enjoyed our Wolfgang Puck cookware. It has succeeded in surviving my dh for 3+ years thus far and functions beautifully. Caphalon here as well. I love the stuff... some times... of course, if you're gonna go for some really great all around cookware, check out the Lodge Signature Series. This is absolutely the best all around cookware I've used. Of course, I believe everything should be cooked in cast iron... but maybe that's just me...

For clarification: When I said stainless, I meant something that is not non-stick. What we have works great, but we both want to expand our tool box a bit. We looked at the All Clad copper core, but it's still pretty new and I wanted to throw it out there and see if any of you have specific products that you like. I think I just spent my tax rebate. ;D

I have the Wolfgang Puck from Sam's also but would totally LOVE the Calphalon. I don't like the "non-stick" stuff as you have to use plastic or wood spoons and such. Love Lodge cast iron (customer of ours=paycheck!) but with a glass top stove-not sure. I get a little clumsy at times. Just call me Grace ;D ;D

Well, we looked at all of the options today and decided to go with the Emeril stainless. It's made by all-clad and has an extremely similar bonded copper core, but is tons cheaper. I'll let you guys know how it performs, if you're interested.

I am interested because I am needing some more cookware. I want the non stick kind that is not hard to clean up. Although, Big Papaw says I never cook. We've got the Emeril non stick as well and I highly recommend it. It's also made by all-clad. It was our first set of "high performance" cookware and it's so much better than the normal non stick stuff, we just couldn't believe it. Our problem was that you just can't do certain things properly in a teflon pan. You can't caramelize onions properly and you really can't sear meat correctly as required for some dishes. The stainless gives us a little more flexibility, plus you can put it in the dishwasher, something that's a big no-no with teflon. Add on:I just made some bacon in one of the new pans. The heat dissipation is totally different from non stick. We're going to be able to do all sorts of weird new stuff with this.

Just remember it is for cooking!!! And by the way where did you buy it? We got the non stick at BB & beyond and the stainless at Dillards. The distributor controls the price pretty tightly, so it doesn't really matter where you get it. Even the internet couldn't provide a bargain.

The only ill health effect that I know of regarding teflon, is that it off gasses some sort of methyl ethyl bad stuff, when you severely over heat it or cook it dry and leave it on the flame for a long time. If you put teflon in the DW, it degrades the finish over time and causes it to chip and scratch more easily.

We bought some cookware at Penney's and only had it a couple of weeks and the non-stick started coming off. I never use metal with non-stick. Don't know what happened. Took it back and got a refund. Lady wanted to know if we wanted another set. Hell no.

No, not those. But I put my non-stick I have now in the dishwasher and it hasn't come off. I have had it for about 3 years now.

It's more like it wears down and starts to get a rougher texture, thus reducing it's ability to release food easily. Mrs Fredo made a really nice risotto in the new pans tonight. The stainless definitely makes a difference for some things.

Actually, Teflon and Silverstone are both the same thing, (PTFE), just different configurations of the same compound. For a good, quick education on the stuff, plus the issues it has, check out this.

I agree. According to Dupont, the difference lies in the addition of other ingredients. Basically, Silverstone is Teflon with "additives". It still has all of the same characteristics though as far as the overheating and such. The only actual NEW non stick is called Green Pan and it uses a compound called Thermolon, but I have read absolutely NOTHING good about the durability or quality of the cookware. Maybe if a better quality manufacturer picks it up and runs with it...
