I got inspired and made breakfast this morning, here's what I made:
1- saute about 2 cups of onions, peppers and mushrooms with a little garlic and what not.
2- Take a nice slice of bread and cut a hole in the center using a glass. I used some Bluff View tomato basil bread, but anything will do. I originally intended to use an English muffin, but we're out.
3- Put the bread on a plate and put both in the fridge until chilled
4 - Mix up two eggs as if you were going to make an omelet. I use two per serving, but use your own judgment.
5 - Put the eggs in a pan with a little butter and cook on low heat until the bottom side is cooked, but the top is still liquid.
6- Remove the chilled plate and bread from the fridge and put your eggs, cooked side down on top of the bread. the chilled plate should stop the eggs from cooking and the center should settle into the hole in your bread.
7- Put your sauteed onions and peppers into the depression in the bread and top with a small amount of cheddar cheese and a couple of slices of red bell pepper.
8- Bake for about 20 minutes at about 325 degrees.
9- Eat and grow large. This was pretty darned tasty.
Use your own judgment on the cooking times. We've got a convection oven, so it may take more or less time depending on your range.

Lunch today:
leftovers! Smoked Brisquet (smoked by Master Rice) peas roasted potatoes and onions broccoli salad roll
Now I need to finish laundry and take a nap! ;D
